You will need:

- 4 boneless chicken breasts
- 2 eggs, beaten
- Half to one cup of desiccated coconut
- Salt, pepper and any other desired herbs or spices (try rosemary, sage or even chili powder)
- coconut oil, for frying

Directions:

1. Place the chicken breasts on a flat, hard surface and cover with a layer of cling film

2. Use a mallet to flatten the breasts until they are about a centimeter or 2 thick

3. Dip each breast into the egg and then into the desiccated coconut and put onto a plate.

4. Season the chicken with your salt, pepper and chosen herbs or spices

5. Heat up some coconut oil in a frying pan and fry each breast until cooked through and golden brown (about 10 minutes in total).

6. Serve with a creamy mushroom sauce and some colourful steamed veggies.
