You will need:

- 2 and a half cups of almond flour (plus an extra half a cup for dusting)
- half a teaspoon of salt
- half a teaspoon of baking soda
- quarter of a cup coconut oil, melted
- 2 eggs
- 1 tablespoon of honey (optional. You could also use Xylitol)
- 1 tablespoon of fresh rosemary, chopped

Directions:

1. Preheat the oven to 180 and grease or line a baking sheet
2. Combine the almond flour, baking soda, rosemary and salt in a bowl.
3. In a separate bowl, mix together the eggs, honey and coconut oil. Mix into the dry ingredients until a dough forms.
4. Lay down a sheet of baking paper on a flat surface and sprinkle with almond flour. Place the dough on top and sprinkle with the rest of the almond flour. Place another sheet of baking paper over the dough and roll out until the dough is about 3 cm thick.
5. Cut rounds out of the dough using a biscuit cutter, and place on baking tray.
6. Bake for 12 - 15 minutes, until golden.
7. Place in a pretty glass jar with a ribbon around for a thoughtful Christmas gift.
